Bird flu in dairy cows doesn’t mean panic in the dairy aisle. It means knowing where the uncertainty actually lives.

You open the fridge before breakfast. The milk looks normal. The yogurt is where it always is. There’s a wedge of cheese wrapped in paper, waiting for toast or an omelet. Nothing about the shelf looks like an outbreak headline.

But since March 2024, when H5N1 bird flu was first detected in U.S. dairy cattle, one everyday question has become more complicated: does avian flu dairy spread change what belongs in your fridge?

The clearest answer so far is also the most practical one: pasteurized dairy looks reassuring. Raw dairy carries more uncertainty.

The Risk Is Not Spread Evenly Across the Dairy Case

CDC says A(H5) bird flu remains widespread in wild birds and has caused outbreaks in poultry and dairy cows. It also describes the current public health risk as low, with most U.S. human cases tied to dairy or poultry work.

Low risk, though, does not mean equal risk. A dairy worker handling infected cattle has a different exposure profile than someone pouring pasteurized milk over cereal. A carton from the commercial pasteurized milk supply is not the same risk category as raw milk in a cold smoothie.

That distinction matters because panic tends to flatten everything. Food safety rarely works that way. The question is not “Is dairy dangerous?” The better question is: which dairy has gone through a process designed to reduce pathogens?

What FDA Testing Says About Pasteurized Milk Safety

Pasteurization is beautifully boring. Milk is heated for a specific time at a specific temperature to inactivate pathogens while keeping it usable for coffee, cereal, yogurt, cheese, butter, and ice cream.

FDA has said it is confident pasteurization is effective at inactivating H5N1, and that the commercial pasteurized milk supply is safe. In FDA testing of 464 pasteurized dairy products — including milk, cheese, butter, and ice cream — researchers found no viable H5N1 virus.

That word “viable” does a lot of work. Viral genetic fragments can remain after a virus is no longer infectious. Finding traces of viral material is not the same as finding live virus capable of causing infection.

So if your question is whether pasteurized milk in your cereal should trigger alarm, the current evidence is reassuring. Federal dairy testing supports confidence in pasteurized commercial products, not dairy avoidance.

Why Raw Milk Is the Higher-Uncertainty Choice

Raw milk skips the very step that makes the rest of the dairy story calmer. Public health agencies have long warned that raw milk can carry Salmonella, Campylobacter, E. coli, and other pathogens. H5N1 adds a viral concern to risks that were already there.

In late 2024, raw milk products were recalled in California after retail raw milk tested positive for H5N1. A positive product test is not the same as a confirmed consumer illness, and that distinction helps keep the conversation grounded. Still, it shows why H5N1 raw milk concerns are not theoretical.

The evidence became more specific in 2025. A Nature Medicine study published October 8, 2025 tested H5N1 stability in raw milk and raw-milk cheese under controlled conditions. The researchers found infectious H5N1 could persist up to 120 days in raw-milk cheeses made under certain pH conditions.

That challenges a common comfort point: the idea that aging alone always makes raw-milk cheese safe from this virus. FDA had previewed related concerns in March 2025, warning that 60-day aging alone may not eliminate viable H5N1 in raw-milk cheese.

The same Nature Medicine study found that ferrets fed contaminated raw milk became infected. Ferrets fed contaminated raw-milk cheese did not become infected in that experiment, which is reassuring but not the final word. Animal models help researchers understand risk, but they do not perfectly predict every human exposure.

What to Do With This Information at Home

The practical path is simple: consider making pasteurized dairy your default while H5N1 continues circulating in animals.

That includes milk, yogurt, cheese, butter, ice cream, toddler cups, overnight oats, smoothies, coffee drinks, and anything served cold. A splash of raw milk in a cold smoothie is a different exposure than an ingredient heated thoroughly in cooking, though heat safety depends on time and temperature.

If you buy specialty cheese, check the label or ask the cheesemonger: Is it made from pasteurized milk? How was it aged? Has the producer changed practices during H5N1 monitoring? Those questions are not rude. They are the same kind of care you might bring to sushi, eggs, or shellfish.

Children, older adults, pregnant people, and immunocompromised people may want the lowest-uncertainty option. If your household is divided, one workable compromise is to keep pasteurized dairy as the everyday default and treat raw dairy as a higher-risk exception.

People who work with dairy cattle or poultry should follow CDC exposure guidance and report eye redness, respiratory symptoms, or flu-like illness. For everyone else, the fridge question is less about fear and more about reducing avoidable exposure.
